Cattle in agriculture are divided into two categories; dairy and beef. Beef cattle are bred specifically for meat production. They have different body types, making them appear more wider, stouter and beefier than their dairy cousins. The are designed to efficiently convert the energy they eat into muscle and fat creating the wonderful-tasting steaks, hamburgers and roasts that we love.

There is approximately 31.2 million head of beef cattle in the United States.

Texas produces 15% of the beef cattle in the United States. Kentucky (ranked #8) is the largest beef cattle-producing state east of the Mississippi River.

The United States accounts for roughly 19% of the world’s beef production followed by Brazil, the European Union, China, and India.

Meat Science Activity: Beef Wholesale Cut Model/Meat Cut ID

Learning all the 60+ beef retail meat cuts can be overwhelming! That’s why we first begin with the eight (8) primal/wholesale beef meat cuts by creating their own beef wholesale cut model. The eight primal cuts are 1) Chuck, 2) Ribs, 3) Loin/Sirloin, 4) Round,5) Brisket, 6) Shank, 7) Plate, and 8) Flank. Members than move on to mastering the beef retail meat cuts learning the 28+ most common cuts with our Beef Meat Cut ID Cards.

Animal Science Activity: Livestock Behavior & Handling

Farmer Ben needs help! He needs to safely move his cows (“beef bot”, aka “Hexbug”) from their pasture to the barn. He needs a chute system designed and built using the Engineering Design Process and the livestock behavior principles learned from Dr. Temple Grandin. Members apply the livestock behavior and handling principles to their chute design.
